
Fresh Fava Greens
Our fava bean plants are prolific. See our April 2023 posting for more information about growing fava beans. We’ve started harvesting the young green shoots for some tasty dishes. They have a mild flavor, a bit like spinach greens. Use like other greens by steaming, sautéing or add to other dishes. Here is a quick and easy recipe for asian style sautéd greens.

Ingredients
- 3-4 cups fava greens, coarsely chopped
- 1/4 cup onion, chopped
- 3-4 cloves garlic sliced
- 1 teaspoon fresh ginger, chopped
- 1 teaspoon olive oil
- 2 Tablespoons water
- 2 Tablespoons tamari or soy sauce
- 1 Tablespoon sesame seeds
- Dash white pepper
- 2 tablespoons fresh chives, chopped for garnish
Process
In a large pan, sauté onion, garlic and ginger in olive oil on medium heat for a few minutes until onion just starts to soften.
Add greens and a couple tablespoons water, stir then turn heat down to medium low, cover and let steam for 5 to 10 minutes, depending on desired texture. Less cooking time will give a fresher taste and stems will be al dente.
Add tamari, sesame seeds and a dash of white pepper. Stir to mix then serve on a plate or bowl. Add chopped chives for garnish.
Makes about 1 1/2 cups cooked greens. Enough for 2 or 3 servings.
